Yummy Recipe


I really liked Smaller Fun Pants idea of trying a new recipe a week and I really just love doing new things. (even if it does take some talking into it) I found this recipe through the pampered chef Season's Best recipe book. It is only $1.00 and it has a about 10-15 recipes. Very Nice. Anyways the name of it is Thai Peanut Chicken Stir-Fry Salad. I love Thai food and my man spent a couple years in Thailand so I always like trying to make Thai food for him. It turned out beautiful except I didnt chop the romaine like I was supposed to but oh well. It was still delicious!!

Week 1 Day 4

breakfast: smoothie - radishes, carrots, celery, lettuce, banana, orange frozen lemons grapes and berries with a muffin

the girls were a bit sick this morning, i think it was the spinach it goes bad pretty fast :( had to throw it out might need to make that a special shopping trip go twice a week just to get spinach instead of the big bag at costco

snack: cheese stick

lunch: rice, salad mix, mushrooms, and green onions

dinner: oriental chicken salad without the chicken and steamed broccoli

recipe: oriental chicken salad

2 chicken breast
2 tbs sliced almonds
1/2 head of cabbage finely chopped
1 pkg ramen noodles chicken flavored uncooked
2 tbsp. toasted sesame seeds
2 green onions sliced

dressing:

1/2 c vegetable oil
1 tbsp sugar
1 tsp salt
1/4 tsp pepper
3 tbsp vinegar

boil chicken or cook in small amount of water in frying pan until tender. let chicken cool, then dice. combing chicken with almons, cabbage, green onions and uncooked broken up ramen noodles. sprinkle ramen chicken seasoning packet over mixture

to make dressing: in glass jar combine oil, sugar, salt, pepper, and vinegar. shakes well pour dressing over salad and toss

refrigerate salad for 2 hours or more for full flavor and softening of noodles

just realized i only put 1/4 cup of oil in the dressing, hmmmm oh well i am sure it will still taste good. i looooove green onions they make any good salad taste much much better :)

03/23/09 Eating for today

i find when i make and drink my smoothies i dont really crave sweets, which is always nice

24 oz water : 1

breakfast: banana nut muffin, orange juice

lunch: cheese stick, toast, and smoothie: lettuce, radish, carrots, spinach, pear, orange juice, and frozen banana, grapes, berries, lemons and almonds

dinner: zucchini lasagna

zucchini lasagna recipe
serves 6-8

8 oz cream cheese
1 cup cottage cheese
1 cup sour cream
1/4 cup onion chopped
1/4 cup green pepper chopped
1 1/2 pounds ground beef (i use turkey)
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon rosemary
1/2 teaspoon salt
1 can tomato sauce
2 1/2 pounds zucchini thinly sliced

In a bowl, combine cream cheese, cottage cheese, sour cream, onion and green pepper/ Brown ground beef with oregano, basil, rosemary and salt; stir in tomato sauce. In a 9" x 13" greased casserole dish, thinly layer a small amount of meat mixture; make a layer of zucchini, cover with a layer of cheese mixture. Repeat until all ingredients are used, ending with meat mixture. Cover and bake at 350 degree for 30 minutes. Uncover and back 30 minutes more

03/22/09 Lazy Eating

i havent done the best at recording what i eat simply because i havent done the best at eating. i have to make a store trip yada yada but at least i am getting fuel in the body :)

breakfast: rice krispies and milk

lunch: chicken nuggets, pickle, ramen soup and girl scout mint cookies *dangerous*

dinner: tuna tacos

tuna tacos recipe
packaged tuna
diced onion
good seasoning

home made tortias

toppings as you prefer

the tuna taste really yummy with homemade tortias havent really tried with the others so you will have to let me know. cook tuna on stove with onion and seasonings and have at it thanks Wick for introducing us to these yummy tacos.

3/18/09 Better Eating

breakfast: smoothie - pear, apple, banana, almonds, grapes, spinach, carrots, radishes, frozen berries and a bit of orange juice
almond poppyseed muffin *yum-yum*

lunch: chicken nuggets and a cheese stick

snack: smoothie and beef jerky

dinner: yummy chicken over rice

yummy chicken recipe

chicken
8oz sour cream
1 can cream of chicken
italian seasoning packet

mix last three ingredients in a bowl. put chicken on the bottom of crockpot, pour mixture over chicken cook on low for 4-6 hours serve over rice
